The other day I decided I wanted to make some salsa after I was given some garden tomatoes. Now I like a lot of ingredients in my salsa so I gathered an onion, garlic, a jalapeno, cilantro, and seasoning. Which means a lot of time slicing, dicing, and chopping. The act of cutting food involves a steady hand and a good grip. Something that people with limited hand use may have trouble with. A potentially helpful tool is this concept sliding and rocking chopping kitchen knife by Andreas Kalt. A chopping knife that requires less hand dexterity while potentially increasing chopping speed.

Roller Blading
This knife starts with dual curved blades similar to the one pizza places use to quickly slice their pizzas. Curved grooves are at the outside top of each blade onto which a handle attaches. The handle and blades then slide against each other via the grooves in a rocking motion. When not in use the pieces can come apart and put back together with the handle acting as a sheath for storage.

More Chops Less Grip
A person with hand arthritis might find this knife helpful because they would need less gripping strength while also getting multiple chops quickly. Two hands on each side of the handle could also be used for better stability.

Limitations
Remember though that this is a chopping knife. So I would not be able to cut my tomatoes with this knife. Not a whole onion either but a  flat onion slices could be chopped. The garlic and cilantro would be perfect for this chopping knife.

Conclusion
Though not specifically designed for people with limited hand use, this concept knife could still be helpful. A certain amount of dexterity would still be needed and since we’re dealing with a blade, safety must be kept in mind. Otherwise I’d love to have this in my kitchen drawer the next time I make some salsa.
